WATERMELON AND FETA SALAD WITH MADANRIN AND MINT DRESSING

Cos lettuce leaves, washed and crisped
400g watermelon flesh, cut into wedges and deseeded
100g red onion rings 200g feta cheese, drained
2 tbsp. crumbled walnuts 1 tbsp. drained green peppercorns

For the dressing

A quarter cup washed mint leaves
1/4 cup or a much as desired - Hickory’s Run Mandarin Infused Olive Oil

Chop the desired amount of Cos lettuce into bite size pieces and spread evenly onto the centre of each plate.
Evenly distribute the watermelon wedges over the lettuce and top with even amounts of onion rings and feta cheese. Sprinkle evenly with the walnuts and peppercorns.
Make the dressing by finely shredding the mint and placing in a small bowl. Pour in the oil and mix.
Spoon the dressing over the watermelon and other ingredients and sprinkle with a little salt (optional).
