Feature Recipe - HICKORY ’S JAFFA MOUSSE
200g good quality cooking chocolate
3 eggs
2/3 cup caster sugar
3 tablespoons espresso coffee (or 1 tablespoon of instant coffee dissolved in 1 tablespoon of water)
2 tablespoons 'Amaretto' (optional)
3/4 cup Hickory's Run Certified Organic Extra Virgin Olive Oil
Break up chocolate and place in a bowl over simmering water. Remove from heat and allow chocolate to melt. Cool to room temperature.
Separate eggs and beat egg whites until stiff. Beat egg yolk with sugar until creamy. Add coffee and liqueur. Fold in olive oil and chocolate.
Gently fold through egg whites and pour into individual bowls. Chill for about 4 hours or overnight.
To serve, sprinkle a pinch of Sea Salt Flakes over the mousse and drizzle with Hickory's Run Infused Mandarin Olive Oil add some cream if desired.
